Cookie Layer

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup soft brown sugar
  • 1/3 cup caster sugar
  • 1 tsp instant coffee
  • 1 egg + 1 egg yolk
  • 2 stick butter (200g)
  • 1/2 cup milk chocolate
  • 1/2 cup dark chocolate


  1. In a pot over low heat make the brown butter, keep it over the heat for 5-8 minutes
  2. In a stand mixer, add both sugars, instant coffee, the brown butter and mix until combined
  3. Add the eggs and continue mixing until combined
  4. Add the flour, baking soda and baking powder gradually and mix on low
  5. Using the spatula add the chocolate and fold everything together
  6. Flatten the cookie dough in the baking pan

Brownie layer

  • 226 g semi-sweet chocolate
  • 150 g butter
  • 1 tsp instant coffee
  • 3/4 cup sugar
  • 3 eggs
  • 2 tsp vanilla extract or vanilla bean paste
  • 3/4 cup flour
  • 3 tbsp cacao powder
  • 1/2 tsp salt
  • 1/2 cup semi-sweet chocolate chips


  1. Preheat oven to 190C or 375f
  2. Line a 8 inch square Baking pan with parchment paper.
  3. Melt the chocolate, butter and coffee on the stove in a double boiler.
  4. In the stand mixer’s bowl add eggs, sugar and vanilla and mix for 2-3 minutes until the mixture becomes fluffy and light in color.
  5. After the melted chocolate has cooled, pour it gradually into the stand mixer and mix until well combined.
  6. Sift in the flour, cocoa powder and salt.
  7. Fold in the dry ingredients without over folding.
  8. Transfer the batter to the baking pan on top of the cookie dough
  9. Sprinkle with sea salt and to the oven for 21 minutes.
  10. Take it out of the oven and top it off with mini marshmallows.
  11. Back in the oven for 3 minutes or until the marshmallows are golden.
  12. Cool for 15 minutes then slice!

Serve with vanilla ice cream & Indulge!
