Ayloul // Tofu Nuggets & Stir Fried Noodles

Tofu Nuggets:

~380gm Tofu
Pressed for 30-60 min

A) In a bowl mix:

  • 1 C flour (we used spelt)
  • Dash of salt and pepper

B) In another bowl mix: 

  • 1 C Bread crumps/panko bread
  • 1/2 tsp onion powered
  • 1tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt and Pepper

C) In a third bowl mix:

  • 2 eggs + 2 Tbsp. water

** For vegan option replace egg with mixture of 1C plant based milk + 1/2 C stretch **

  1. Cut tofu to desired thickness and shape.
  2. Toss the tofu pieces into the flour, shaking off all the excess flour, then into the egg or milk mixture. Then dip it into the crumb mixture, roll around, and place on an oiled baking sheet.
  3. Drizzle oil over nuggets and bake in a 420C oven for 35-40 min flipping them halfway through the baking.


Stir Fry Noodles

  • Mixed vegetables
  • Noodles


Sauce 

  • 1/2 C veggie broth/ water
  • 1 Tbsp. starch or tapioca
  • 2 Tsp. toasted sesame oil
  • 3 Tbsp. soy sauce
  • 1 Tbsp. honey

Preheat the vegetable oil in a large pan over medium high heat. 

 

  1. Add the onions, carrots and celery to the pan and cook for 4-5 minutes.
  2. Add the garlic and ginger and cook for 30 seconds. Add the rest of the vegetables and cook for 5 min. Add the sauce, mix for few minutes then add cooked and drained noodles.
  3. Mix well and serve.
